Sandwiches and Appetizers

What are the six types of sandwiches? Closed, Open-faced, triple-decker, finger, wraps
What is the difference between a bread and a spread? Bread: the base of a sandwich Spread: barrier between the fillings
What is a pullman loaf? Rectangular shaped sandwich bread loaf with a flat top and even texture.
What is a croissant? Flaky, cresent shaped roll
What is a focaccia? An italian flat bread that is flavored with olive oil and herbs.
What is kaiser roll? Round,crusty roll that is often sprinkled with poppy or sesame seeds.
What is a torpedo roll? Long, skint sandwich roll (Hoagies)
What is pita bread? Round shaped f;at bread cut open to form a pocket.
What is a totilla? The flattened round bread baked on a griddle or deep fried
What is a chapatti? An indoan whole wheat flat bread
What is phyllo bread? Very thin, layered pastry dough. It is used in sandwich wraps
What is a crepe? A small, thin pancake made with egg batter
What are the three main types of sandwich spreads? Butter, Mayonaise, and vegetable purees
What are the main sandwich fillings? Meat, Poultry, Fish, Seafood, and vegetables
What is sauerkraut? Finely sliced cabbage that has been fermented in brine.
What are the types of Hot Sandwiches? Basic, Grilled, and Fried
What is a Monte Cristo? A closed, shallow deep friend sandwich
What is au jus? Juices that a chef will obtain or get from roasting meat
What is pastrami? A seasoned, smoked meat
What is a club andwich? A triple-decker sandwich that has cold, sliced cooked turkey, bacon, or ham
What is a salad sandwich? A sandwich that has a salad made with a fatty dressing such as mayonaise as the filling. (Chicken or Egg Salad)
What are the six types of Hot Appetizers? Brochettes, Filled Pastry Shells, Meatballs, Rumaki, Stuffed Potatoe Skins, Chicken Wings
What is brochette? A combination of meat, poultry, fish and vegetables, served on a skewer (Kebabes)
What is a bouchee? An appetizer that used shells made from puff pastry
What is rumaki? An appetizer made of blanched bacon that is wrapped around vegetables, seafood, chicken liver, meat, poultry, or fruits
