What is UTH with regard to shelf stable milk? UTH is ultra high temperature milk that has been pasteurized at a very high temperature.
What is a coddled egg? An egg that is simmered out of the shell for about 30 seconds, just long enough so that the whites are warm, thickened, and semi-opaque - yolk is runny.
Eggs removed from the shell and cooked in a broth or water are called what? Poached eggs.
What is it called to bake an egg in the oven? Baking in the oven is called a shirred egg.
What are egg substitutes commonly made of? Egg substitutes are commonly made of a soy product.

What is whey? Whey is a clear liquid that contains some of the water-soluable substances in milk.
What is rennet? Rennet is an enzyme that causes milk to curdle.
What is an example of a fresh cheese? Cottage cheese and cream cheese are considered fresh cheese
