What do you do in case of a grease fire? Throw flour or baking power onto the fire.
What is a food-borne illness? A disease transmitted through the bacteria in food.
What are the symptoms of food-borne illnesses? Nausea, fever, upset stomach, etc.
How long do the symptoms of a food-borne illness last? Symptoms can last from a day up to week.
What are the risky foods that can have food-borne illnesses? Raw meat, poultry, eggs, raw fruits, and vegetables processed or stored in unsanitary conditions.
What is the TDZ range? 40-140 degrees
What temperature do you cook ground beef at? 160 degrees with no pink.
What temperature do you cook steaks at? At least 145 degrees with a little pink if desired.
What temperature do you cook poultry at? 170-180 degrees with no pink.
How do you prevent cross contamination? Always clean your hands and your workspace before and after using ingredients.
